Sneak a Sneaky ‘Raw’ Snickers (with honey)

I haven’t had a snickers bar in years (my husband still calls them Marathons!). However, I still remember the time in my audit career when, during one of those long evenings in the office, I would (only very occasionally, honest!) pop to the vending machine. Snickers was the favourite of the favourites. I loved the rich caramel and chocolate flavour, infused with that divine nutty aftertaste.

…But how do you keep eating your favourite treats without the added guilt? How do you stay away from refined sugar? How do you please your tastebuds, while still fuelling your body with nourishing superfoods?

 

There are lots of refined sugar substitutes used in raw ‘cooking’. We tend to use our pure, raw, mountain honey, which has antibacterial properties and is rich in living enzymes and natural vitamins.

 

So after some experimenting in the kitchen, our ‘raw’ snickers is free from refined sugar but still nutty, caramely and chocolatey, a real delight for our senses. In fact, they turned out freaking awesome and have become an inspiration for something to follow, watch your space!

 

Bottom layer

1/4 cup tahini
1/4 cup cashew butter (could use also either almond or peanut butter)
1 tsp maca powder (optional)
1 tbsp lucuma powder (optional)
1 tsp vanilla
pinch of salt
1/2 cup whey protein
1/2 cup almond flour
4 tbsp coconut oil
4 tbsp honey
Method: Mix all of the above ingredients in a bowl

 

Caramel layer

10-12 deglet noir dates soaked for a couple of hours
2-3 tbsp coconut oil
Method: Blend the above ingredients, using a few tbsp of the soaked dates water (do not make it too runny)
Spread out the bottom layer on a tray. It will help to oil your hands and/or spatula with coconut oil to help with the stickiness of the mixture, caused by the whey protein powder.
Spread out the caramel layer on top, put some monkey peanuts on top and place the tray in the freezer, overnight.

 

The following day, take the tray out of the freezer for 10 minutes, cut the content into pieces.

Here comes the time for the chocolate
150g cacao butter
75g cacao powder
4 tbsp honey
pinch of salt
pinch of vanilla
Method: Simmer water into a pan and place a heat-prove bowl over the top (Bain Marie method). Mix and melt all of the above ingredients. When ready, let the chocolate cool down a bit.

 

Dip the bars into the freshly made chocolate and refrigerate.

Enjoy your guilt-free, vending machine-free snicker bars.
