HONEY AND GINGER BITES

Loving autumn colours, soft, warm, and really comforting like our HONEY AND GINGER BITES. Their beauty is in their simplicity to make. They are a fantastic snack and are perfect for our morning coffee or afternoon tea.

 

INGREDIENTS (12 bites)
100g jumbo oats
100g raw almonds
1/2 tablespoon baobab powder
3 tablespoons coconut oil (melted)
1/2 teaspoon nutmeg
25-30g freshly grated ginger (depending on personal taste)
3-4 tablespoons The Pink Lady Bee honey

 

Raw chocolate
35g cacao butter
2 tablespoons coconut butter
5 tablespoons cacao powder
2 tablespoons The Pink Lady Bee honey
pinch of salt

 

METHOD
• Ground the jumbo oats and the almonds in the food processor
• Add baobab powder and nutmeg to the mixture
• Grate the fresh ginger finely
• Mix the grated ginger, the coconut oil and the honey to the rest of the ingredients
• Roll into balls and place in the fridge for 15-20min, while making the chocolate

 

Chocolate
• Simmer water into a pan and place a heat-prove bowl over the top (Bain Marie method)
• Melt the cacao butter and the coconut butter in the bowl
• While gently stirring the mixture, add the cacao powder
• Add the honey and salt in the end
• Rest aside to cool down

 

….dip the bites in the freshly made chocolate and refrigerate.
