CHRISTMAS CHOCOLATE ORANGE AND HONEY CAKE

I love my mum’s homemade recipes, mouth-watering, delicious wholesome wonders (refined sugar free!!). This time, we both decided to create something with a burst of Christmas flavour. And I believe that the fresh orange juice and orange zest do the job fantastically well, along with the rest of the wholesome ingredients. Let’s have a blast!

INGREDIENTS

2.5 tea cups of wholemeal spelt flour
1/3 tsp bicarbonate of soda
2 tsp baking powder
1 tsp vanilla
the zest of one large orange
200ml fresh orange juice
2/3 of a tea cup coconut sugar
4 eggs
150ml rapeseed oil
100g raw dark chocolate (we use Conscious organic raw dark chocolate)
4 tbsp honey
50ml almond milk

 

METHOD
1. In a bowl with spelt flour, add the bicarbonate of soda and the baking powder, then sieve all of the ingredients through (the ‘flour mixture’)
2. Stir the eggs and the coconut sugar together with a hand held mixer, continuously for 5-6 minutes (the ‘eggs mixture’)
3.  Add the rapeseed oil and the fresh orange juice to the ‘eggs mixture’ and continue stirring for a few more seconds
4. Add the ‘flour mixture’ gradually to the ‘eggs mixture’ while stirring gently with a spatula (the ‘combined flour/eggs mixture’)
5. Place a heat-proof bowl over the top of a saucepan (the Bain Marie method), and melt the chocolate in it. Add the almond milk to it.
6. Add half of the melted chocolate mixture to 1/3 of the ‘combined flour/eggs mixture’ (set the rest of the melted chocolate aside for later)
7. Pour the mixture in a cake shaped baking pan
8. Pour the other 2/3 of the ‘combined flour/eggs mixture’ on top of it
9. Use a spoon to gently fold in the colours
10. Preheat the oven to 175 degrees and bake for 40-45min
11. Test if the cake is baked by using a toothpick
12. When done, let it cool for 5 min, then take it out of the baking tray and leave it on a plate for another 10 min
13. Warm up the rest of the melted chocolate with the almond milk (using the Bain Marie method) and add the HONEY to it
14. Drizzle the honey chocolate all over the cake, ENJOY!
